When I want to scan in SD mode, is it possible to change the paper size, the image quality, etc. on my scanner?
You can change only part of the settings by pressing buttons as below.

PDF / JPG button
Press to change the scanning file format (PDF or JPEG).

HQ/ STD button (applicable models only)
Press to change the resolution. HQ is 600 dpi and STD is 300 dpi.

COLOR / MONO button
Press to change the scan mode (color or mono [black and white]).

2 side / 1 side button (applicable models only)
Press to change the scan mode (2 side scan or 1 side scan).
